Rocket Pesto Pasta
A simple, tasty twist on traditional pesto!
Ingredients:
2 large handfuls of fresh rocket
1 handful of grated Parmesan cheese
1 clove of garlic
1 small handful of pine nuts (or sunflower seeds for a nut-free version)
4 tbsp olive oil
Pasta of your choice
Instructions:
Blend the rocket, Parmesan, garlic, pine nuts, and olive oil into a smooth pesto using a blender or food processor.
Cook the pasta according to the package instructions, then drain.
Stir the fresh rocket pesto through the warm pasta until coated.
Optional: Top with cherry tomatoes or extra grated Parmesan.
Rocket & Cheese Quesadillas
A quick, cheesy snack with a peppery twist!
Ingredients:
2 large flour tortillas
1 handful of fresh rocket
1 cup grated cheese (cheddar or mozzarella work well)
1 tbsp olive oil or butter
Instructions:
Place one tortilla in a pan over medium heat.
Sprinkle grated cheese and a layer of rocket on top, then cover with the second tortilla.
Cook for 2-3 minutes on each side until golden and crispy.
Slice into wedges and serve warm.
Rocket and Tomato Mini Pizzas
Perfect for kids to assemble themselves!
Ingredients:
Mini pizza bases (or halved English muffins/pita bread)
Tomato sauce or passata
1 handful of fresh rocket
Grated mozzarella cheese
Cherry tomatoes (halved)
Instructions:
Preheat the oven to 200°C (180°C fan).
Spread tomato sauce over each mini pizza base.
Sprinkle mozzarella cheese and add cherry tomato halves on top.
Bake for 8-10 minutes until the cheese is melted and bubbling.
Once out of the oven, add fresh rocket leaves on top and serve.
